Ingredients

  • 2 oz Firm Tofu
  • ¼ cup Corn
  • ¼ cup Red Cabbage
  • ¼ cup Cucumber
  • 1 Tbsp Green Onion
  • ¼ Lime
  • 2 Tbsp sunflower seeds
  • 2-3 cups Romaine Lettuce
  • 2 Tbsp Sesame Dressing

Instructions

  • Lightly press the tofu to squeeze out some of the water. Cut into 4 layers and cut the layers into triangles. Bake in the oven at 350° Fahrenheit for 10 minutes, then flip and bake another 10 minutes.
  • While the tofu bakes, wash and chop the lettuce.
    Slice the cucumber into diagonal coins.
    Thinly slice the red cabbage and the green onions.
    If using canned corn, drain it.
    Slice a lime into wedges.
  • For the dressing, please follow my recipe for sesame dressing.
  • Assemble each salad using the quantities listed.

Easiest Vegan Chickpea Salad

A very simple salad you can enjoy with just about any meal. This is made with canned chickpeas, fresh apple, carrots, and red onion in a bed of lettuce.

Ingredients

Salad Ingredients

  • 1 15oz can chickpeas
  • 3-4 cups green leaf lettuce
  • 1 apple
  • cup carrots
  • 2 Tbsp red onion

For The Dressing

  • Tbsp apple cider vinegar
  • 1 Tbsp light olive oil
  • 1 tsp organic sugar
  • tsp fresh black pepper

Instructions

  • Wash & chop the lettuce. Slice the carrots and red onion thinly (julienne). Drain the chickpeas. Cut the apple into ½" cubes.
  • For the dressing: Add the dressing ingredients to a small jar and shake vigorously. Or, add them to a bowl and wisk. Shake or whisk until the sugar is dissolved. Add some freshly ground black pepper.
  • Combine the salad and dressing in a large bowl and toss to combine well. Can be eaten immediately. Best is if you cover and chill it for about an hour before serving.

Notes

  • I used light extra virgin olive oil from Cobram Estate, read more about them below!
  • You can use vegetable oil, canola oil, or salad oil instead of light olive oil. Suzuki grandma most likely used Japanese “salad oil” which I think is the same thing as vegetable oil here in the states.
  • For lettuce, any of these types works great:
    • Iceberg lettuce
    • Romaine lettuce
    • Boston lettuce
    • Butter lettuce
    • Possibly even baby spinach or mixed greens but I haven’t tried it. If you try it let me know how it was!

    For a more substantial salad, you can also add a base layer of rice, quinoa, or other grains.

  • Prep: Drain the chickpeas. Chop the bell pepper finely and shred the carrot. Mince the garlic if not already minced.

  • Cover and let marinate in the fridge at least 8 hours. Keeps up to 3 days in the fridge.

Notes

  • I prefer to use red bell pepper with this chickpea salad, but you can use any color including green or a combination of colors. The taste will vary slightly depending on which color you choose so choose flavors that you like!
  • If you don’t have a pre-made Italian seasoning spice mix, use a pinch of each of these dried spices:
    • Oregano
    • Basil
    • Marjoram
    • Thyme
    • Rosemary
  • I use California-produced olive oil from Cobram Estate in this and all my recipes calling for olive oil.

Instructions

  • Prep: Slice the onions thinly. Peel & slice the sweet potato into wedges. Dice the red onion, tomato, and green onion.
  • To cook the quinoa, add the water, quinoa, and vegetable bouillon to a saucepan and bring to a boil. Then turn down the heat to the lowest setting, cover the pot, and simmer for about 5-10 minutes until the quinoa is cooked.
  • For the veggies: In a skillet over medium-high heat, cook the sliced onion, sweet potatoes, and oil until the sweet potatoes are slightly blackened and the onions are soft. Then lower the heat, add 2 tablespoons of water and cover for about 5 minutes.
  • Add the corn, black beans, and cumin. Sprinkle with salt and pepper and gently stir to combine well.
  • Scoop the quinoa into the pan with the veggies and gently toss everything together.
  • Serve in bowls topped with chopped tomato, red onion, green onion, and southwest ranch dressing.

  • ½ cup water
  • ½ cup raw cashews
  • ¼ cup vegetable oil
  • 2 Tbsp lemon juice
  • 2 Tbsp apple cider vinegar
  • 2 tsp minced garlic
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp onion powder
  • ½ tsp dry green onion
  • 1 pinch of salt

Instructions

  • Put the cashews in a microwave-safe dish, add water until nuts are covered, and microwave 30 seconds to blanch the cashews. Drain and discard the water.
  • Add the blanched cashews, oil, vinegar, lemon juice, and spices to a blender and blend for about 40 seconds until mixture is totally smooth.
  • Serve immediately or store in the fridge up to 1 week.

I developed this dressing specifically for my southwest vegan quinoa salad. It’s the yummiest sauce ever that’ll make you think of creamy ranch dressing, but with strong Tex-Mex leanings.

This creamy southwest dressing can be used on burgers and salads, and of course in buddha bowls it’s perfect as well.

Before I was vegan I used to love the southwest ranch dressing at McDonalds and I wanted to create a copycat recipe that would mimic that flavor. Try this vegan ranch dressing on vegan fried chicken, pizza, or as a veggie dip, too!

This delicious cucumber recipe is a great side salad for any dinner. You can also use it as a buddha bowl topping!

When serving this cucumber dish as a salad on its own, cut the cucumber pieces a little bigger as shown in the photo. It’ll make it easier to pick up individual pieces of cucumber. For buddha bowls, it’s better to dice the cucumber a little finer so that it’s not dominating the dish too much.

This is a good “fusion”-y recipe that suits many types of cuisines well. For example, it would make a great side salad with some vegan enchiladas, or as a topping in a Japanese buddha bowl.

What I love most about this vegan salad dressing recipe is that not only is it absolutely DELISH in my opinion, but it also tastes good to my kids. In fact, if I put this sauce on vegetables that they normally aren’t interested in, such as sweet potatoes, well… they’ll eat them and ask for second helpings.
