When I first decided to become a vegetarian on January 1st, 2019, I had no idea that my husband would go along so willingly with my new diet.

I was shocked at how my kids started enjoying eating their veggies the more I made plant-based meals.

I was surprised with the fact that we all seemed to look and feel a bit healthier…

And I was amazed at how easily we had made what would have seemed like an extreme transition. It wasn’t!

After this first year happily eating meat-free meals, it only seemed natural for us to continue our plant-based pursuits by “going vegan” — as so many seem to be doing nowadays, whether it’s out of concern for the animals involved, for the Earth, for our well-being, or for all of the above.

I always considered myself an animal lover. But over the years I realized I wasn’t really acting like one.

Now that I’ve committed to eating a vegan diet, I feel like I’ve taken a step closer to being the kind of person I want to be, and that feels really good.

Why I Started This Site

When it comes to vegetarian and vegan meals, I know how easy it can be to get stuck eating the same few meals over and over again. I hear many new vegans talking about how they are always feeling hungry, not having enough energy, or even commenting on the opposite – that they constantly feel bloated or that they are gaining weight (yes!). The fact is, most of us were not raised on a plant-based diet and it takes some learning how to do it properly at first.

That’s why I decided to start documenting my own process of going vegan by creating InstantVeg.com as a vegan recipe blog, and a resource for new vegans who are learning a whole new way to eat.

There’s a misconception in our society that vegans have to abstain from eating basically anything good and live off of humble salads. I had to learn to address my own biases against vegans once I became one myself. I realized that one definitely doesn’t have to starve or feel “limited” when choosing a vegan diet.

I now know that when you go vegan and close the door to animal products, a new door bursts open with an amazing variety of yummy new plant foods to try.

My goal for my recipes is always using only plant-based foods, with a total time of an hour or less from prep to plate. And with help from my trusty Instant Pot, because I love not having to babysit my cooking.
