Why I Started This Site

When it comes to vegetarian and vegan meals, I know how easy it can be to get stuck eating the same few meals over and over again. Most of us were not raised on a plant-based diet and it takes some learning and also time for your body to adjust to you eating different things.

I decided to start documenting my own process of eating vegan by creating InstantVeg.com as a vegan recipe blog, and a resource for new vegans who are learning a whole new way to eat.

There’s a misconception that vegans have to abstain from eating basically anything good and live off of humble salads. I had to learn to address my own biases against vegans once I became one myself. I realized that one definitely doesn’t have to starve or feel “limited” when choosing a vegan diet.

When you go vegan and close the door to animal products, a new door bursts open with an amazing variety of yummy new plant foods to try.

The honest truth is that it is always a little challenging when you are switching to a diet that’s different from how you were raised. But it’s worth it. Your health is worth it!

My goal for my recipes is always using only plant-based foods, with a total time of an hour or less from prep to plate. Often with help from my trusty Instant Pot, because I love not having to babysit my cooking. I do love cooking but most of the time I would rather be doing other stuff! So, easy, quick, healthy, and delicious vegan meals are what I strive for, in life and here on this site, for you!

One more thing. This blog is a judgement-free zone. I don’t treat veganism like a religion and I hope you won’t, either. I try to eat as much as possible without using animal products, without losing sleep over it. I believe this is the healthiest attitude one can have when making dietary choices.
