That’s right, I don’t drain the pasta water. Sorry for not being clearer about that in the recipe. I *do* drain the water from the cauliflower, though.
At first the sauce will seem thin, but within about 5 minutes the pasta will absorb some of the moisture and the consistency should be just right.
